The Telemark

Muddle in a the bottom of a rocks glass: 

½ ounce maple syrup

½ ounce orange juice

¼ ounce balsamic vinegar

4 dashes Angostura bitters

1 orange wheel

Add ice and:

2 ounces bourbon

Pour the contents of the rocks glass into a cocktail shaker and back into the rocks glass, twice (this technique is called “rolling,” it chills the drink but doesn’t overly aerate it).

Top with a splash of club soda.
