The Alvah Stone Flip

Averna is an Italian liqueur that falls into the category of amari (bitters). In this drink the bitterness is tempered by the maple syrup and egg white.

2 ounces Averna amaro

1½ ounces Mayflower Brewing Company porter

¼ ounce local maple syrup

1 egg white*

1 dash Bittermens mole bitters


Combine all ingredients except nutmeg in a cocktail shaker. Shake hard for 30 seconds to combine (the term for this is “dry shaking”). Add ice to the shaker and shake hard for another 60 seconds—the shaker should be frosty. Strain through a fine-meshed sieve into a footed glass. Grate nutmeg over the top of the drink.

* When using raw eggs, freshness is a must. The danger of food-borne illness can be minimized by washing eggs and taking care to prevent contact between the shell’s exterior and the edible portion within. If you’re still concerned, you can opt for pasteurized eggs.
