This Irish casserole is traditionally made with potatoes and cabbage, but this cheesy dish is just as delicious when made with broccoli.
2 large potatoes (about 1 pound), peeled and cut into chunks
1 cup milk
1 pound broccoli, chopped
1 tablespoon butter
4 ounces cheddar cheese, grated
Preheat oven to 375°. Put the potatoes into a medium saucepan with the milk and add water to cover. Simmer, covered, until potatoes are almost tender (about 10 minutes), and add the broccoli to the pot. Cook until potatoes are tender and the broccoli is bright green. Most of the liquid should have been absorbed by the potatoes, but if there is a lot of liquid in the pan, drain it off.
Add butter to the pan and mash the potatoes and broccoli together. Stir in most of the cheese and season to taste with salt and pepper. Put the mash into a small baking dish (about 7- by 11-inch) and top with the rest of the cheese. Bake until cheese is melted and browned.
