Indestructible Gingerbread

No matter how delicious they smell, these ornaments are NOT EDIBLE! Decorate them with paint, glitter, spices, or whatever else strikes your fancy.

2 cups cinnamon (use the cheap stuff in the big containers, not the $20-an-ounce variety here!)
1 tablespoon ground cloves
1 tablespoon allspice
2 tablespoons ginger
Approximately 2 cups water

Preheat the oven to 200°.

In a medium bowl, mix all the dry ingredients together. Add water gradually, stirring with a rubber spatula until a dough comes together (you may not need all the water). You’ll get a cloud of cinnamon dust if you work too quickly, so take your time.  

Knead until it forms a firm dough. Roll out and cut into shapes. Poke a hole in the top of each cutout if you’re planning on hanging them later. Reroll the scraps together and cut out more shapes.

Put the shapes on a baking sheet and bake until fully firm and dry, about 1–2 hours, depending how thick they are.
