8 ounces green beans, trimmed and snapped in half
1 clove garlic, sliced
1 cup cooked cannellini beans or chickpeas
2 tablespoons extra-virgin olive oil
1 lemon, juiced
Pinch of cayenne pepper, optional
Salt and freshly ground black pepper, to taste
Over medium-high heat, place the green beans and garlic clove in a skillet with 1/2 cup of water. Cover and steam for 5 minutes, or until the beans are bright green. Drain off any remaining water and put into the bowl of a food processor.
Pulse in the processor until the beans are roughly chopped. Add the cooked cannellini beans or chickpeas, a squeeze of lemon juice, cayenne (if desired), a sprinkle of salt and a few grinds of black pepper. Pulse until the hummus is as chunky (great for sandwiches) or smooth (good for dip) as you like. Taste and add salt, pepper and lemon to taste.
