Ginger Chai

2 tablespoons chopped fresh young ginger

1 tablespoon cinnamon chips (or 2 sticks)

1 tablespoon chopped fresh orange peel (or 2 teaspoons dried)

12 black peppercorns

8 cardamom pods

5 cloves

1–2 whole star anise “stars”

Milk to taste

Honey to taste

Black tea (optional)*

Combine all ingredients but the milk, honey and tea (if using) with 4 cups of cold water in a saucepan. Simmer over low heat for 20 minutes, or until reduced to about 3 cups.

Strain, add honey and milk to taste, and enjoy.

* If you want to add black tea to your chai, add it after the water has been reduced: Add it to the pot, cover, steep as long as you desire, then strain and add honey and milk to taste.
